Laksa Ayam

Bahan:
1 ekor ayam
100 gr bihun, rendam air panas, tiriskan
50 gr taoge, siangi , seduh air panas selama 30 detik
1 ikat daun kemangi, ambil daunnya
3 bt telur ayam, rebus
6 lbr daun jeruk, sobek pinggirnya
2 lb daun salam
2 btg serai, memarkan
3 cm lengkuas, memarkan
3 cm jahe, memarkan
450 ml santan kental
1 sdt garam
2 sdm bubuk kaldu ayam
minyak utk menumis

Bumbu Dihaluskan :
10 bh bawang merah
3 bh cabai merah
5 bh bw putih
1 sdt merica bubuk
1 sdt kunyit bubuk
5 bh kemiri, sangrai
1 sdt ketumbar bubuk

Cara membuat :

  1. Rebus ayam dengan 1 sdt garam, lengkuas dan daun salam hingga empuk, hilangkan lemak yg mengapung
  2. Panaskan minyak, tumis bumbu halus, serai, daun jeruk, dan jahe, aduk rata.
  3. Masukkan ke dalam kuah ayam
  4. Tambahkan santan, aduk hingga rata
  5. Ambil ayam dan suwir-suwir
  6. Siapkan mangkuk, tata bihun, ayam suwir, dan taoge, tuangkan kuah dan isiannya
  7. Beri daun kemangi dan telur rebus, sajikan hangat

ENGLISH VERSION

Chicken Laksa - Indonesian Style

Ingredients:
1 whole chicken, cut into 8 pieces
100 gr rice vermicelli, boil in hot water until soft
50 gr bean sprouts, soak in hot water for 30 seconds
3 eggs, boiled, halved
6 kaffir lime leaves
2 bay leaves
2 lemon grass, smashed the white part
3 cm galangal, smashed
3 cm ginger, smashed
450 ml coconut cream
1 tsp salt
2 tbsp chicken stock powder
2 spring onion, finely chopped
1 bunch Indonesian lemon basil
cooking oil
2lt water

Paste:
10 Asian shallots (1/2 big red onion)
3 big red chilies
5 cloves garlic
1 tsp ground white pepper
1 tsp ground turmeric
5 candlenuts
1 tsp coriander ground

Directions:

  1. Bring water to boil, add the chicken, galangal, ginger, bay leaves and 1 tsp of salt, cook until the chicken are just tender. Discard any excess fat
  2. Heat the oil in a little pan over medium heat, stir fry the paste for 2 minutes or until fragrant
  3. Put the paste into the chicken soup, stir until mix well
  4. Add coconut milk, lemon grass, salt, sugar and lime leaves
  5. Reduce the heat to low and gently simmer for 15 minutes, stirring occasionally.
  6. Adjust the taste, add salt and sugar if necessary.
  7. Turn off the heat
  8. Discard lemon grass, galangal, lime leaves and ginger
  9. Spoon the soup into a serving bowl
  10. Take out the chicken, shredded, put in a serving plate

Serving Suggestion:
- Put bean sprouts, egg, rice vermicelli and shredded chicken into a dish bowl
- Sprinkle with spring onion
- Spoon the sopu onto the bowl
- Garnish with the lemon basil
