Sup Buntut (Ox-Tail Soup)

Bahan :
1 kg buntut sapi yg sudah dipotong2, hilangkan lemaknya
4 siung bawang putih di memarkan
1 bh tomat yg agak besar, potong menjadi 4 bagian
2 btg daun bawang, iris lebar2 (2 cm)
200 gr baby carrot/ wortel, potong utuh 2 cm
200 gr kentang, potong kotak (bisa juga kentang bulat2 kecil)
bumbu penyedap
1 sdt merica
margarin untuk menumis
garam secukupnya

Cara membuat :

  1. Rebus buntut sapi sampai empuk, sambil sedikit2 dihilangkan lemak yang mengapung di atas air kaldu.
  2. Masukkan kentang dan wortel, tambah air sdikit lalu rebus hingga empuk
  3. Siapkan penggorengan kecil, tumis bawang putih menggunakan margarin
  4. Masukkan ke dalam kuah daging berturut-turut bawang yang sudah di tumis (tanpa menyertakan minyak tumisan) ,seledri, tomat dan daun bawang
  5. Setelah daging dan sayuran empuk, masukkan garam sedikit dan bubuhkan dengan bumbu kaldu rasa sapi.
  6. Angkat. Beri taburan daun bawang dan sajikanĀ bersama emping goreng dan sambal botol.

ENGLISH VERSION

Ingredients:
1 kg ox tails, trim the fat
4 cloves garlic, smashed
1 big tomato, quarterly chopped
2 spring onions, cut into 2 cm
200 gr carrots cut into 2 cm long
200 gr baby potatoes, halved
beef stock powder
1 tsp white pepper powder
1 tbsp margarine
1 tsp salt and 1/2 tsp white sugar

Directions:

  1. Cook ox tails until tender, remove any excess fat (using slow cooker is the bestĀ  but if you want the quick method, use pressure cooker instead)
  2. Add carrots and potatoes, add water if necessary
  3. Heat oil in a small frying-pan over medium heat, stir fry garlics until browned
  4. Add garlic into the soup, add beef stock, sugar, pepper and salt, adjust the taste
  5. Remove from heat
  6. Serve in a soup bowl, sprinkle with chopped spring onion.
