Beef Ribs with Mild Curry Sauce

Bahan :
2 lt air
450 ml santan
500 gr iga sapi
1 btg sereh, memarkan
5cm kayu manis
6 lbr daun jeruk, sobek pinggirnya
3 cm lengkuas, memarkan
3 lb daun salam
2 bh tomat, belah 4
garam sesuai selera
1/2 sdt gula pasir

Bumbu Dihaluskan :
5 bh cabai merah besar
1 sdt jintan
1 sdt kunyit bubuk
2 sdt ketumbar bubuk
5 bh kemiri
1 sdt merica bubuk
8 bh bawang merah kecil
5 bh bawang putih

Pelengkap :
- Irisan daun bawang
- Emping goreng
- Kecap manis
- Jeruk limau
- Sambal soto

Cara Membuat :

  1. Rebus daging hingga daging empuk, lalu potong2
  2. Tumis hingga harum bumbu halus dengan 3 sdm minyak goreng, lalu masukkan ke dalam kuah kaldu daging
  3. Tambahkan serai, daun jeruk, lengkuas dan daun salam, didihkan
  4. Masukkan santan cair, masak lagi hingga mendidih
  5. Diicip rasanya, kalau sudah enak masukkan potongan tomat lalu sajikan selagi hangat, beri perasan air jeruk limau (kalau nggak ada bisa pakai jeruk nipis) lalu beri taburan irisan daun bawang, kecap manis dan hidangkan bersama emping dan sambal soto sebagai pelengkap.

ENGLISH

Ingredients:
2 lt water
450 ml coconut milk
500 gr beef ribs
1 lemon grass, use the white part only, smased
5cm cinnamon stick
6 kaffir lime leaves
3 cm galangal, smashed
3 bay leaves
2 tomatoes, quartered
1.5 tsp salt
1/2 tsp white sugar

Paste:
5 big red chillies
1 tsp ground cumin
1 tsp ground turmeric
2 tsp ground coriander
5 candlenuts
1 tsp ground white pepper
8 Asian shallots
5 cloves garlic

Garnish :
- 2 spring onions, chopped
- Emping (bitternut) crackers
- Sweet soy sauce (ketjap manis)
- Lime juice
- Chilli paste

Directions:

  1. Fill the large saucepan with water bring to the boil
  2. Place meat into the pan, cook until the meat is tender
  3. In a small fry pan, stir fry the paste until fragrant and add into the soup
  4. Add lemon grass, lime leaves, galangal and bay leaves
  5. Add coconut milk, reduce the heat, simmer for about 15 minutes, stirring occasionally
  6. Add salt to taste
  7. Add tomatoes, remove from the heat straight away.

Serving Suggestion:
- Spoon the soup into a serving bowl
- Sprinkle with fried onion, ketjap manis and lime juice
- Enjoy the soup with chilli paste sauce and bitternut crackers.
