Sate Padang

 

Bahan :
500 gr daging sapi has (kalau suka jerohan, bisa pakai lidah, hati, babat dan usus)
3 lbr daun jeruk, sobek pinggirnya
1 lbr daun kunyit
3 cm lengkuas, dimemarkan
3 cm jahe, dimemarkan
1 batang serai, dimemarkan
1/4 sdt gula pasir (optional)
tepung beras (untuk pengental bumbu sate)

Bumbu Dihaluskan :
8bh bawang merah
4bh bawang putih
3 cm kunyit
1 sdm munjung ketumbar
1/2 sdt jintan bubuk
garam secukupnya

Cara Membuat :

  1. Haluskan bawang putih, bawang merah, garam, ketumbar, kunyit, jintan.
  2. Lalu masukkan ke dalam panci berisi daging beri air secukupnya.
  3. Masukkan serai, daun jeruk, lengkuas, gula pasir dan jahe, lalu rebus sampai daging empuk.
  4. Angkat daging, potong-potong kecil dan tusuk dengan tusukan sate.
  5. Olesi sedikit minyak sayur, kemudian bakar sebentar sambil dibolak balik
  6. Angkat jika sudah matang.

Saus Sate:

  1. Didihkan sisa kuah rebusan daging dengan 100 gr tepung beras dan 200 ml santan
  2. Aduk hingga mengental, lalu angkat dari kompor, tambahkan garam kalau perlu
  3. Potong-potong ketupat, letakkan beberapa sate, kemudian siram dengan kuah sate dan taburi bawang goreng.
  4. Hidangkan selagi masih panas.

ENGLISH VERSION

Padang Beef Satay (Famous Beef Satay from Padang, West Sumatera)

Ingredients:
500 gr beef steak (rump/sirloin)
3 kaffir lime leaves
1 turmeric leaf
3 cm galangal, smashed
3 cm ginger, smashed
1 lemon grass, smashed
1/4 white sugar (optional)
rice flour
bamboo skewers

Paste:
8 Asian shallots (1/2 big red onion)
4 cloves garlic
1 tsp ground turmeric
1 tbsp ground coriander
1/2 tsp ground cumin
1 tsp salt

Directions:

  1. Bring 1 lt water to boil, cook the meat and paste until are just tender
  2. Add lemon grass, lime leaves, galangal, sugar, ginger and salt, cook for another 15 minutes
  3. Take the meat into 2×2cm cubes
  4. Immerse skewers in water before use to prevent them from splintering
  5. Thread the beef onto a skewer
  6. Brush with cooking oil (use the oil spray), grill until browned all over

Satay Sauce:

  1. Bring the reserved meat juice to a boil,
  2. Add 100 gr rice flour and 200 ml coconut milk, cook until the sauce thicken
  3. Adjust the taste, add salt if necessary
  4. Serve with the satay, garnish with fried onion.
