Steamed Mushrooms Wrapped in Banana Leaves

Pepes Jamur

Bahan:
350 gr jamur (bisa jamur merang atau jamur kancing), potong sesuai selera
100 ml santan cair
1 bt telur, kocok lepas
2 lb daun salam
daun pisang untuk membungkus

Bumbu Halus:
3 bw putih
4 bh bw merah
3 btr kemiri sangrai
1 sdt kunyit bubuk
1/2 sdt ketumbar bulat
garam dan gula pasir sesuai selera

Cara Membuat:

  1. Panaskan minyak 2 sdm, tumis bumbu halus hingga harum
  2. Masukkan jamur dan daun salam, aduk rata
  3. Tambahkan santan cair, kecilkan api, masak hingga air hampir mengering
  4. Diicip rasanya, kalau sudah enak, angkat
  5. Dinginkan sebentar, campur dengan kocokan telur, aduk rata
  6. Ambil selembar daun pisang, sendokkan jamur ke daun pisang, semat kedua ujungnya
  7. Panaskan panci pengukus, kukus jamur yang sudah dibungkus daun pisang selama 20 menit
  8. Lalu panggang di atas bara api sebentar saja
  9. Siap dihidangkan.

ENGLISH

350 gr button mushrooms, quartered
100 ml coconut milk
1 egg, whisk
2 bay leaves
Banana leaves, cut into rectangle shape (10×30cm)
3 garlic cloves
4 shallots
3 candlenuts
1 tsp turmeric powder
1/2 tsp ground coriander
Salt and sugar to taste

Method

  1. Heat the oven 120C
  2. Process or blend garlic, shallots, candlenuts, turmeric and coriander until smooth
  3. Heat the oil in a large pan, add the paste and stir fry until fragrant
  4. Add mushrooms, bay leaves,  salt and sugar
  5. Add coconut milk, bring to a boil, reduce heat, simmer, stirring for 5 minutes until the sauce is reduce and thicken slightly, remove from the heat
  6. Place 1 tbsp of mushrooms on the centre of the leaf
  7. Folding in each side, secure each side (top and bottom) with tooth pick
  8. Place parcel in a large steamer, steam covered for about 15 minutes then put them in the oven for another 10 minutes.
  9. Ready to serve.
