Gulai Kambing 

Bahan :
1 kg iga kambing
1 liter santan
2 bh bunga cengkeh
1 bh pekak
1 btg serai, memarkan
5 lb daun jeruk, sobek2 pinggirnya
5 gr asam jawa campur dengan 25 ml air
bawang goreng untuk taburan

Bumbu Dihaluskan :
3 bh cabai merah kriting
10 bh bawang merah
3 bh bawang putih
1 sdt ketumbar
4 butir kemiri
1 sdt merica
1/4 sdt jintan
2 cm jahe
1 sdt kunyit bubuk
1 sdt garam
1/2 sdt gula pasir
3 sdm minyak goreng untuk menumis

Cara Membuat : 

  1. Tumis bumbu halus, pekak, serai dan daun jeruk sampai harum
  2. Masukkan daging kambing aduk hingga berubah warna
  3. Tuang santan dan cengkeh adukr ata
  4. Tambahkan air asam, masak hingga bumbu meresap dan kuah mengental
  5. Sajikan dengan taburan bawang goreng

Ingredients
1 kg lamb spareribs, cut the ribs between the bones to separate them
1 lt coconut milk
2 cloves
1 star anise, halved
1 lemon grass, smashed
5 kaffir lime leaves
3 tbsp tamarind pulp
fried onions
3 tbsp vegetable oil

Blend/Process
3 long red chilies
10 Asian shallots
3 garlic cloves
1 tsp ground coriander
4 candle nuts
1 tsp white peppercorns
1/4 tsp cumin
3 cm peeled ginger
1 tsp ground turmeric
1 tsp salt
1/2 tsp white sugar

Method

  1. Heat oil in large frying pan over high heat
  2. Stir fry the paste, lemon grass, star anise and lime leaves until fragrant
  3. Add the spare ribs, cook, stirring about 5 minutes or until lightly brown all over
  4. Reduce the heat, add coconut milk, cloves, tamarind puree
  5. Simmer uncovered for another 20 minutes or until cooked through stirring occasionally
  6. Adjust the taste, add salt/sugar if necessary remove from heat, place in a serving bowl
  7. Sprinkle with fried onions.
