			<content:encoded><![CDATA[<p>As the world’s largest archipelago country, Indonesia is well known for having a lot of cultural diversity. With more than 250 ethnic groups across the nation,  each group contributed their own influence into Indonesian culture. As a result it gives a lot of varieties in Indonesian cuisine.</p>
<p>The basic flavorings of Indonesian cuisine are coming from herbs and spices such as candlenut, coriander seeds, turmeric, peppercorns, lemon grass, galangal, shallots, garlic, lime basil, kaffir lime leaves, palm sugar, tamarind and many more. Sometimes it is combined with hot chilies that makes Indonesian food very rich in flavor and taste hot and spicy. Indonesian cooking is not that kind of quick cooking techniques but the end result is always surprising all food lovers.</p>
<p>As an agricultural country, Indonesian plain is dominated by paddy field. Therefore rice is the staple food for Indonesian people. The meal usually combines rice, meat, fish or vegetable dish, soup and salad and all is served at once. Spoon and fork are are used while having meal although in many parts of the country it is also common to eat with fingers.</p>
<p>Throughout its history, Indonesian food has been influenced by China, India and Western and Middle Eastern traditions. The most popular dishes that originated in Indonesia are well known in most Asian countries such as chicken satay,  beef rendang, soto ayam (clear chicken soup) and many more. Not to mention about tofu and tempeh dish are also very popular.</p>
<p>Indonesia amongst other Asian countris, is a heaven for hawkers food. You can find them easily, everywhere.  Sometimes the taste is much better than the home cooking. There’s something missing if we try it at home even using the same ingredients. Ikaray’s Kitchen tries to combine both home cooking and hawker food cooking. We got all recipes from different sources including our family secret recipes. We tried so hard to translate all recipes in English.</p>
<p>So that for those who’s requested the translation (especially to all of our dearest friends), I am still working on it. I just realised that our recipe collection has grown so quickly. So please bear with me. :-))</p>

<li>Masukkan daging ke dalam kuah soto, aduk2 hingga mendidih, koreksi rasa</li>

<li>Masukkan krecek dan kacang tolo, aduk rata, tambahkan air sedikit, masak hingga bumbu meresap</li>
<li>Terakhir masukkan rawit utuh, masak hingga matang dan kuah berkurang.</li>

<p><strong>Bahan:</strong><br />
500 gr daging sandung lamur potong kotak2, sisakan kaldunya sebanyak 300ml<br />
Terong ungu, potong kotak2 (jumlahnya sesuai selera)<br />
Jagung manis 1 bh, dipipil<br />
Kacang panjang, potong 3 cm<br />
Buncis, potong 3cm<br />
Cabai merah besar 3 bh, potong 2 cm<br />
Sereh 1 btg, memarkan putihnya<br />
Jahe 3 cm, parut<br />
Daun kemangi 5 batang, ambil daunnya<br />
Daun jeruk 6 lb, sobek pinggirnya<br />
Garam sesuai selera<br />
1/4 dt gula pasir<br />
3 sdm minyak goreng<br />
<strong><br />
Bumbu halus:</strong><br />
5 bh Cabai merah (sesuai selera)<br />
5 bh bawang merah<br />
3 bh bawang putih<br />
1 sdt terasi bakar</p>
<p><strong>Cara Membuat:</strong></p>
<ol>
<li> Panaskan minyak goreng</li>
<li>Tumis bumbu halus, jahe parut, serai dan daun jeruk hingga harum</li>
<li>Masukkan rebusan daging, aduk rata</li>
<li>Tambahkan air kaldu daging 300 ml</li>
<li>Masukkan jagung dan cabai hijau besar, masak sebentar, kecilkan api</li>
<li>Masukkan sisa sayuran, masak hingga sayuran matang, tambahkan garam dan gula pasir, koreksi rasa.</li>
<li>Angkat,  sajikan.</li>
</ol>
<p><strong>English:</strong></p>
<p><strong>Ingredients</strong><br />
500 gr gravy beef, cut into cubes (3cmx3cm)<br />
500 gr eggplants, cut into cubes (3cmx3cm)<br />
1 cup sweet corn kernels<br />
150 gr snake beans, cut into 5cm lenghts<br />
1 red chilli, sliced thinly<br />
1/2 cup fresh lemon basil leaves<br />
6 fresh kaffir lime leaves, torn<br />
3 tbsp vegetable oil<br />
1 tbsp grated fresh ginger<br />
1/4 tsp sugar<br />
salt to taste</p>
<p><strong>Blend together:</strong><br />
5 fresh red hot chillies<br />
5 shallots<br />
3 garlic cloves<br />
1 tsp shrimp paste</p>
<p><strong>Method</strong></p>
<ol>
<li>Heat oil in a wok.</li>
<li>Stir fry garlic, chilli paste, ginger,lemon grass and kaffir lime leaves until the mixture is fragrant.</li>
<li>Add beef and water, cook until the meat is just tender.</li>
<li>Add the rest of ingredients, reduce heat, cook for another 5 minutes.</li>
<li>Add sugar and salt.</li>
<li>Remove from heat, ready to serve</li>

2 sdt garam
Cara Membuat:

Karena beli ikan tanpa tulang, jadi lebih gampang.
Taruh ikan di atas permukaan yg datar. Ambil dagingnya menggunakan sendok makan. Ambil serat2 putihnya [...]]]></description>

<p><strong>Cara Membuat:</strong></p>

<li>Karena beli ikan tanpa tulang, jadi lebih gampang.</li>
<li>Taruh ikan di atas permukaan yg datar. Ambil dagingnya menggunakan sendok makan. Ambil serat2 putihnya dan kulitnya dibuang (pastikan berat ikan bersih 700 gr)</li>
<li>Siapkan food prcessor, giling ikan, telur dan garam serta bw putih halus hingga tercampur rata</li>
<li>Pindahkan adonan ikan ke dalam mangkuk yg lebar</li>
<li>Tambahkan tepung sagu  sedikit demi sedikit, aduk rata</li>
<li>Jangan aduk terlalu lama karena akan membuat empek2 menjadi keras</li>
<li>DIdihkan air di panci, ambilsedikit adonan, rebus hingga mengapung, jika rasanya sudah pas, mulai membuat adonan menjadi bentuk lonjong</li>
<li>Masukkan pempek ke dalam panci, rebus sampai semuanya mengapung ke permukaan.</li>
<li>Angkat lalu tiriskan, lalu tiriskan</li>
<li>Panaskan minyak, lalu goreng hingga kecoklatan</li>
<li>Jangan menggoreng terlalu lama karena pempek akan meletup.</li>
<li>Potong2 pempek yang sudah matang</li>
<li>Hidangkan bersama mie kuning, irisan ketimun, siram dengan kuah cuka lalu taburi dengan ebi halus.</li>
</ul>
<p><strong>Utk taburan ebi:<br />
</strong>Sangrai ebi, lalu diblender halus</p>
<p><strong>Kuah Cuka:</strong></p>
<ol>
<li>Haluskan bawang putih bersama dng kulitny, cabai merah dan garam</li>
<li>Masukkan ke dalam 500 ml air, tambahkan dng irisan gula jawa dan asam (atau cuka)</li>
<li>Masak hingga mendidih, icip2 hingga rasanya enak dan pas.</li>
<li>Angkat, lalu saring.</li>

<p><strong>Membuat Saus Kacang</strong></p>
<ol>
<li>Blender/tumbuk halus kacang</li>
<li>Ulek cabai merah dan garam hingga halus, campur ke dalam kacang</li>
<li>Tambahkan air matang, blender hingga tercampur rata</li>
<li>Masukkan garam, gula jawa dan cuka, icip rasanya hingga pas</li>
<li>Rasanya asam manis gurih.</li>

<p><strong>ENGLISH</strong></p>
<p>Ingredients:<br />
250 gr finely shredded white cabbage<br />
250 gr green coral lettuce, trimmed, torn<br />
1 cucumber,diced into 2cm pieces<br />
2 big potatoes, diced into 2cm pieces, steamed<br />
1 firm tofu, diced into 2cm pieces, stir fry until half cooked<br />
4 hard boiled eggs, quartered</p>
<p>Bitternut crackers and fried onions</p>
<p><strong>Peanut Dressing</strong><br />
100 gr salted peanuts<br />
100 gr salted cashew nuts<br />
2 long red chillies<br />
1 tbsp white vinegar<br />
1 tbsp grated palm sugar<br />
salt to taste<br />
water</p>
<p><strong>Method</strong><br />
Blend or process cashew and peanuts until the mixture is chopped finely</p>
<p><strong>Serving Method</strong><br />
Place ingredients in a large salad bowl<br />
Drizzle salad with peanut dressing; toss gently to combine<br />
Served with fried onions and bitternut crackers</p>

1 btg daun bawang, iris halus<br />

500 gr rebung kalengan siap pakai, iris spt batang korek api</p>
<p><strong>Bumbu:<br />
</strong>1 sdm kecap asin<br />
1/2 sdm kecap manis<br />
1 sdt garam<br />
1/2 sdt merica bubuk<br />
75 ml air (kaldu ayam juga leibh enak)</p>
<p><strong>Bahan Saus:</strong><br />
500 ml air<br />
1 bw putih, memarkan<br />
50 gr gula merah, iris halus<br />
1 sdm kecap asin<br />
6 sdt tepung sagu, larutkan dng sedikit air</p>
<p><strong>Membuat Isi:</strong></p>
<ol>
<li>Panaskan minyak, tumis bw merah, putih sampai harum</li>
<li>Masukkan daun bw, seledri, udang, masak sampai udang berubah warna</li>
<li>Tambahkan ayam, ebi, rebung dan telur orak arik, masak sampai matang</li>
<li>Icip rasanya kalau sudah enak, angkat, dinginkan</li>
<li>Bungkus bahan isi dengan kulit lumpia</li>
<li>Goreng dengan minyak yg panas hingga kecoklatan.</li>
</ol>
<p><strong>Membuat Saus:</strong><br />
- Didihkan semua bahan kecuali larutan sagu<br />
- Tuang larutan sagu, aduk rata, didihkan hingga mengental, angkat.<br />
- Hidangkan lumpia bersama saus dan acar ketimun.</p>
<p><strong> ENGLSIH</strong></p>
<p><strong>Ingredients</strong><br />
2 shallots, sliced thinly<br />
3 garlic cloves, sliced thinly<br />
2 spring onions, sliced thinly<br />
2 tbsp celery leaves, sliced thinly<br />
250 gr peeled prawns<br />
100 gr mince chicken<br />
500 gr bamboo shoots, sliced thinly<br />
1 scrambled egg<br />
1/2 tbsp sweet soy sauce (ketjap manis)<br />
1 tbsp soy sauce<br />
salt to taste<br />
1/2 tsp ground white pepper<br />
75 ml chicken stock<br />
12&#215;12 cm-square spring roll wrappers<br />
Cucumber pickles<br />
3 tbsp oil for a stir fry and a large amount for deep frying</p>
<p><strong>Method</strong></p>
<ol>
<li>Heat oil in a large wok</li>
<li>Stir fry shallots, garlic until fragrant</li>
<li>Add the rest of ingredients until the mixture cooked trough</li>
<li>Add ketjap manis, salt, pepper and water</li>
<li>Adjust the taste, remove from heat, cool</li>
<li>Blend 1/2 tsp of cornflour with the water in small bowl</li>
<li>Place about 1 tbsp of the filling near one corner of each wrapper</li>
<li>Lightly brush edges of each wrapper with cornflour mixture</li>
<li>Roll to enclose filling, folding in ends</li>
<li>Heat oil in large sauce pan or wok</li>
<li>Deep fry spring roll until golden brown</li>
<li>Drain on absorbent paper; serve with cucumber pickles and dipping sauce</li>
</ol>
<p><strong>Dipping sauce</strong><br />
500 ml water<br />
1 garlic clove, crushed<br />
50 gr grated palm sugar<br />
1 tbsp soy sauce<br />
6 tsp cornflour, blend with the water</p>
<p><strong>Method</strong></p>
<ol>
<li>Boiled all ingredients except cornflour in a small saucepan</li>
<li>Add cornflour stir over medium heat until sauce is thicken</li>
<li>Remove from heat, cool</li>
